Happy happy, abundant abundant January my sweet followers. I've felt inspired to start posting recipes again. It's been awhile as I got busy with life and a full time job, but now I am free again to create and be in my flow. The last year has been quite a whirlwind of new experiences and new doorways that have opened for me.
I've really stepped into my confidence and my power in the last 11 months. I've been reminded by the universe just how much I am loved and cared for.
I have had new teachers come into my life and I've really created a beautiful friend group for myself. It's so refreshing to sit down and write a bit on here again + share my artistic expression through food.
I want to share this beautiful salad recipe with you all. It's so rich in vitamins + it's nutrient DENSE. I named it Heart & Crown Kale Salad because of the gorgeous purple kale & onion (for your crown chakra) and the green leaves (for your heart chakra).
I feel sooooo vibrant when I eat raw greens. I just feel them raising my vibration.
If you can get your hands on some fresh kale leaves from the farmers market, please do! I believe that the fruits and veggies that are less handled by humans + machines, and more direct from the soil and local farms, the more energetically nourishing they are.

Either way, get a nice big glass bowl ready and let's make some
Heart & Crown Kale Salad (V + GF)
Servings: 2-4
Time: 10 minutes
Ingredients:
1 bunch of curly purple kale (use regular green if you don't have access to purple kale)
1/4 cup thinly sliced purple onion
Dressing:
6 TB vegan mayo (preferably one made with avocado or olive oil)
1 TB coconut aminos (GF soy sauce could work as sub - I haven't tried it though)
1 TB spring water
2 tsp maple syrup
1 tsp fresh lemon juice
1 1/2 tsp blackening seasoning
3 TB hemp seed hearts
Sprinkle of salt to taste
Directions:
Wash your kale, de-stem and chop to bite-sized pieces. Put into a large glass bowl. Toss in the thinly sliced onion.
For the dressing, mix all ingredients together in a separate bowl until nicely combined. Add to the kale & onion. Use your hands to massage the dressing into the kale.

This salad tastes even better the next day! It will keep for up to 3 days in the fridge. You can also add some other fresh veggies or fruit to compliment the salad for a meal.
I think cucumbers, cherry tomatoes, avocado or pomegranate seeds would all be delicious on here. I've also had seasoned tofu on it, which was delicious. Another yummy option would be some spicy tempeh. :)
