Juicy Pineapple Carrot Salad

I don't have words for this recipe! I know it looks so simple, but it's like heaven. Pure heaven. The flavors are magical and you might find yourself victim to the whole bowl of this.

I have made this recipe to produce a heftier yield. I do it because it's easy for me and my partner to eat through in just a couple of days. However, if you are the only one eating it you may want to divide the recipe in half because it only lasts about 4-5 days max stored in the fridge.


Juicy Pineapple Carrot Salad

Time: 20 minutes

Servings: 8


Ingredients:

4 cups organic carrots, shredded (you can use a grater or food processor)

2 cups fresh pineapple, chopped small

1 cup unsweetened coconut, shredded

1 cup raw walnuts, roughly chopped

1/2 cup dried goji berries

1/2 cup organic black raisins

1/2 cup raw pumpkin seeds

2 large organic oranges

1 organic lemon

2 TB maple syrup (or preferred sweetener - date syrup would also be nice)

2 tsp. ground cinnamon


Directions:

Use a zester to gather the zest from your oranges and lemon. Put that delicious, fragrant zest in a large bowl. Juice the same oranges and lemon. Mix the juice with the zest, maple syrup and cinnamon in your large bowl.

Next, add all of your other ingredients to the juicy blend you've made.

Mix up and enjoy!

Refrigerate for a couple hours to overnight for best flavor. Keeps in fridge for about 4 days.


Note:

If you find it's too dry (the dried fruit soaks up a lot of moisture) after marinating in the fridge, you can add a bit more fresh orange juice to suit your fancy. <3
