Smoky Roasted Sweet Potatoes

Enjoy these sweet orange yummies as a pretty side dish, as part of a breakfast hash, in tacos or a buddha bowl!


These sweet potatoes are:

- crisp on the outside with a soft bite on the inside

- super aromatic

- slightly sweet

- smoky spiced

= sweet & savory perfection

Smoky Roasted Sweet Potatoes

Time: 20-22 minutes

Servings: around 5


Ingredients:

2 large organic sweet potatoes

2 TB avocado oil

2 TB pure maple syrup

1 tsp. smoked paprika

1 tsp. dried oregano

1 tsp. pink salt

1/2 tsp. ground cinnamon

1/2 tsp. ground turmeric

1/2 tsp. ground black pepper


Directions:

Preheat oven to 400 degrees F.

Line a large baking sheet with parchment paper.

In a medium bowl whisk together the oil, maple syrup and seasonings. Set to the side.

Wash and peel the potatoes (or leave the peels on if you like that!).

Dice into small bite sized pieces making sure they're uniform in size.

Add the diced potatoes to the seasoning blend and use your hands to work the seasoning over the potatoes well.

Add the contents to your lined baking sheet and spread out evenly. Give them plenty of space so they aren't crowded (this will help so they get crispier!)

Roast in oven for 15-20 minutes until fork tender and golden.

Enjoy! Stores in fridge for around 2 days.
