Vibrant Vegan Buddha Bowl

How fantastic are these hearty bowls of earthly goodness? It's like everything your body needs in one single bowl for you to savour. It makes your cells buzz with nourishment!


You can use whatever veggies, grains and greens you prefer, but this combo is one of my favorites. So here you are! Experiment and have fun with your wholesome rainbow bowl!

Vibrant Vegan Buddha Bowl with Lemon Tahini Dressing


This bowl takes me about 1 hour to make. I also make several more servings for later in the week. For example, I cook about 2 cups of quinoa while a bunch of my veggies are roasting in the oven. I also whip up the tahini dressing during this time. I love having all of the ingredients separate so that I can use them how I want to throughout the week.


Ingredients:

Cooked quinoa (preferably cooked in veggie broth!)

Roasted brussels sprouts (my recipe here)

Roasted sweet potatoes (my recipe here)

Fresh organic spring mix lettuce, kale or spinach

Organic dried cranberries

Pumpkin seeds

Lemon Tahini Dressing


Lemon Tahini Dressing:

1/4 cup tahini

1/4 cup spring water

2 TB fresh lemon juice

1/4 tsp. pink salt


Directions:

In a small bowl whisk the tahini ingredients together until it is at the consistency and flavor you like. You may need to add more of any one of those ingredients because all tahini is different! Mix until smooth.


In your food bowl, assemble the quinoa, veggies, cranberries and seeds how you prefer. Drizzle on your delicious tahini and enjoy!
