I have these oats several times a week for my breakfast. They keep you full from all the fiber and the carbs give you a healthy amount of energy. I love putting different toppings on each time to switch it up a bit. I recommend coconut, fruit or seeds!

Warming Pumpkin Oats (V + GF)
Yield: 1 serving
Cook time: 7-8 minutes
Main Ingredients
1 cup non-dairy milk
1 tsp molasses (has lots of calcium & magnesium!)
2 - 3 TB raisins
2/3 cup old-fashioned GF oatmeal
1/4 cup pumpkin puree
1 tsp pumpkin pie spice (cinnamon, cloves, nutmeg, allspice)
1 TB coconut sugar (sub maple syrup)
1 pinch of salt
2 TB nuts or seeds to top, optional
Preparation
In medium saucepan over medium heat, combine the non-dairy milk, molasses and raisins. Bring to a slow boil, stirring constantly.
Add in oats and cook for 1 minute, stirring constantly.
Turn off heat.
Stir in the pumpkin, spice, coconut sugar, and salt.
Cover and let sit for 3 minutes.
Serve immediately with walnuts or pumpkin seeds on the top.
Additional Notes
Feel free to double this recipe! It is so yummy that you may want seconds.
Leftovers don't store well.
